Hungry for enchiladas?

Include some enchiladas the next time you are hungry for a Mexican dinner.

At this writing, my mom is rummaging through her many recipes because she feels like making some enchiladas. She asked me for the recipe I use, but I do not use one.


I did once share my directions for making an enchilada casserole here, and will include it again, in case anyone would like to have it. I find that it is a lot easier to make an enchilada casserole than it is to roll each one individually, and it is also (in my opinion) easier to serve.]


One thing I especially like about enchiladas is that they lend themselves so well to all sorts of variations. You can make them out of seafood, poultry, pork, beef, veggies or even just cheese.
