Surimi, anyone?

Enjoy a sandwich roll filled with imitation crab or lobster, made into a salad.
The morning of writing this, I prepared that night’s dinner, which was a form of taco salad.
I have had many different versions of taco salad, including the usual one with ground or shredded beef. Also, chicken, halibut, cod, catfish, shrimp and some with nothing but veggies. I like them all, but must admit that the favorite at my house is taco salad made with surimi, otherwise known as imitation crab, even though surimi usually has a small percentage of genuine crab mixed into the formula.
Most grocery stores do not sell the kind of surimi I like. The typical offering, to me, is too squishy and soft, and lacking in flavor.
