Homemade coconut macaroons offer a sweet treat when you’re hungry for a snack.

 

My husband’s birthday is in April, and sometimes very close to Easter. 


When he was a child, his mom used to make a bunny cake for his birthday, with frosting and coconut for fur and jelly beans for the eyes and nose. I carried on that tradition after we were married, but honestly cannot remember exactly when I stopped.


I only know it happened due to becoming too busy, or being out of town, and that sort of thing. Then he started a weight-loss program in order to reduce risk of a recent surgery, so I wasn’t doing much baking. Maybe I will make him one this year.
