Simmer a pot of homemade minestrone soup for a delightful winter meal.
Many people, myself included, enjoy the variations of the seasons.
I can’t say I enjoy feeling cold, but for the few times I find myself outside on winter days, the cold air does give a person a brisk pick-me-up. I am not into snow sports, now that my kids have grown, but I like looking at it from a warm indoor vantage point.
The winter cold is a wonderful opportunity to treat oneself and family to hearty soups that warm us up from the inside. Here are a few of my favorite soup recipes that I hope will become your favorites, too. They all have an Italian theme, even though I didn’t have that intention in mind.
