Mario Daccarett and Golden Valley Farms is making its name by producing cheese from sheep milk.

He operates on 10 acres in Chowchilla and has a flock of 200 East Friesian and Lacaune sheep from Germany. The family started with a small herd of 39 ewe lambs bought in Nebraska and Virginia.

“There are no other flocks like this,” he said. “People who raise these sheep don’t want to sell them.”

He hopes to make 20,000 pounds of cheese this year, all of it from the milk of his own flock...
