According to the California Department of Food and Agriculture (CDFA), California has led the nation for the last 20 years in the production of several processed dairy products, including yogurt, butter, and ice cream.

Since 2006, cheese has become a part of those successful products, amounting to 23.1 percent of the country’s total cheese production at last count — good enough for second place in the United States.

On a local level, dairy has a drastic impact on the economic success of Madera County as well.

In 2011, milk fell behind only almonds in the Madera County agricultural crop report, at nearly $330 million in revenue...
