There are thousands of ways to make a burrito. Everybody has their own way and their own preferences. So, today we aren’t going to hold these burrito recipes up asthe best ever, just as a bit of inspiration to enjoy some good food wrapped in a tortilla.
My family always seemed to have a pot of pinto beans simmering on the stove. When my mom would ask me, “What would you like for dinner?” I almost always answered, “Beans and tortillas!”
I don’t think I ever got to the point where I’d had enough. Of course, my mom would not subject the rest of the family to having beans for dinner every night; they liked variety.
To this day, I like to wrap the beans in a soft, warm, flour tortilla and roll it up so the bean juice doesn’t drip out. You may call me crazy, but that’s what I ate for breakfast the last couple of mornings. Beans are just one ingredient to make burritos out of, so let’s look at some other ideas...
