There is usually some sort of food trend going on at any given time, but one thing that never goes out of style is comfort food. Comfort food can be casseroles, beverages, roasts, stews, you-name-it, including desserts!

I thought it would be fun to focus on comfort-food desserts, perhaps because I have been thinking a lot about them. One of the first ones that came to mind is a lazy-daisy cake with broiled frosting made of butter, brown sugar and coconut. Can’t you just taste it now?

Let’s pretend we have some on a plate, fresh from the oven, along with a cup of hot coffee, cocoa or tea. And here I am, only halfway through my weight-loss goal! I’ll reach that goal eventually, but who can resist comfort food desserts?
