This year for Easter my family is going to go ahead and serve a traditional ham, but what we're looking forward to the most is marinated and barbecued Cornish game hens, split into halves.

I will go ahead and share the game hen recipe and ham ones, in case any of you are thinking along those lines as far as the holiday menu goes. The Cornish game hen one isn't really much of an actual recipe, though; I just throw things together without measuring. I included it in an earlier column, but thought I'd repeat it.

I am including approximate number of servings as per the recipes, even though they seem to vary.

Grilled Cornish game hens

This is the non-recipe I put together. The main ingredients should be extra-virgin olive oil and white wine, but feel free to use your own judgment as to how much to use...
