I was lucky to have some Italian heritage as a culinary influence when I was growing up. It wasn’t just a matter of having many Italian relatives; there were Italian friends, neighbors and classmates, and food was an important part of life.
Of course, that can be said of any culture or nationality, but today I’d like to feature some Italian soups. As I write this, it is snowing at my house, and I wasn’t expecting that. So, soon I will be in the kitchen making some hot, hearty soup! As long as my electricity doesn’t go out, which usually happens when there’s rain, wind or snow.
Quick Italian sausage soup
I like to add onions to this and almost every other soup I make. And a bit of parsley.
