I love to grill this time of year, and actually continue to do so throughout the entire year.
One of my favorite meats to grill is split and marinated Cornish game hens. I will share my recipe, even though there are no measurements involved; it’s one of those “throw together” type of deals.
There are people I share the grilled hens with and they really enjoy the flavor. One woman who had claimed to dislike game hens changed her mind after she tasted them grilled. So, if you are looking for something beyond the usual steaks, ribs, burgers, hot dogs/sausages and chicken, pick up one or two (or however many you need) of the little frozen Cornish game hens and plan to serve them at your next cookout. I think you’ll be pleased.
I am also including one recipe for roasting the hens and one for rotisserie cooking. Oh, even though this week’s column isn’t about the Madera District Fair’s cooking contests, I’d like to throw in a final reminder that Tuesday at 6 p.m. is the entry deadline.
