If you are one of the many people who cooked a big ham for Easter dinner, chances are you might have some leftovers you’re wondering what to do with. Personally, I am “off my feed” as far as ham goes, and I’m not even sure why. It isn’t that I ever ate too much of it or too often. Just a phase, I guess.
I prepared a prime rib roast, with French green beans, maple-glazed carrot coins and rosemary and olive oil garlic-roasted baby red potatoes.
If you do have some leftover ham lurking around your kitchen, here are a few recipes that feature ground or cubed ham. I hope you are all enjoying spring so far, and able to keep up with the changing weather patterns (or lack of patterns, I should say).
Ham biscuit roll with cheese sauce
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk
- 1 1/2 to 2 cups ground cooked ham
- 1 tablespoon instant minced onion
- Salt and pepper
- Dry mustard
