Even though spring won’t be official until the vernal equinox on March 22, it’s close enough where I think we can start planning some springtime menus.

The first thing that came to mind was leg of lamb. It is usually reserved for a holiday, such as Easter, and you can certainly consider serving it for that special day if you want. But even if you don’t want to wait for a holiday, you can serve a leg of lamb at any time.

I dug through my recipe files and found several to present for your consideration.
