A few days ago, I did my main grocery shopping for the week, and included what has become one of life’s necessities: fresh sugar snap peas.

One of the reasons I wanted to explore ways to cook or prepare these delicious crispy green vegetables is to inspire me to do something with them besides snacking. I love them so much I even eat them on the way home from the store! It’s like I can’t resist.

If you love sugar snap peas as much as I do, maybe we can find some delicious ways to serve them as part of our meals and elevate them above and beyond snack status. Let’s see what we can do.

Glazed sugar snap peas with bacon

  • 1/4 pound bacon, minced
  • 1 1/2 cups fresh sugar snap peas
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon raw or light brown sugar
  • Salt and freshly-ground pepper, to taste
