Grilled cheese sandwiches have been getting a lot of attention these days. Not that they were ever unpopular, but it seems that the good, old-fashioned grilled cheese sandwich that most of us grew up with is now being presented in many new ways.

Even though I’m not sure the basic recipe can be made any better than it already is, I thought it might be fun to explore some of the newer innovations.

Before we begin, I’d like to confess something. Nothing earth-shattering or gossip worthy, but for many years I toasted my cheese sandwiches under a broiler or in a toaster oven. It wasn’t until I watched a friend cook a cheese sammie in a skillet with some melted butter that I even thought of preparing one that way. Can you imagine?

Then I found out that everyone else I knew always made their grilled-cheese sammies in that manner! Sometimes I wonder about myself! ...
